The Vegan Chipotle Queso Recipe

Ingredients:

2 Tbs Extra Virgin Olive Oil

1/4 Tsp Chili Powder

1/2 Tsp Salt

1 Chipotle Pepper in adobo sauce

1 Tbs Adobo Sauce

1/2 Orange Bell Pepper diced

3/4 Cup Raw Cashews soaked overnight

1/2 Cup Water

1/4 Cup Nutritional Yeast


Instructions:

Prepare your cashews by dipping them in the water overnight, or cook the cashews for ten minutes until soft, if you don't have time.

Mix all ingredients into a high-speed blender and don't stop the blender, until sauce bean completely smooth, yummy and creamy.

Serve it with any toppings you like, but I recommend to you to serve it with hot salsa or jalapenos, personally I find it good!

Recipe Notes:

You can go to any foods store to buy the chipotle peppers in adobo sauce you can find it usually in the International foods.

This Vegan Chipotle Queso is good with very much with any veggie burger. But you can also serve it with chips and salsa, to have a classic meal.

Please boil the cashew queso in a small saucepan and stirring it constantly. Don't boil the cashew-based queso in the microwave.

You can keep the queso in the fridge for only 2-3 days.
